Chicken Piccata Meatball

A delicious take on the traditional Italian dish chicken piccata are these meatballs made from chicken piccata.  

These meatballs are made from ground chicken and seasoned with lemon, herbs, and Parmesan cheese, as an alternative to classic chicken breast cutlets.  

As the meatballs bake, the traditional lemony sauce, made with butter, chicken broth, capers, and white wine, comes together.  

Savor it as a starter or as a main dish served with rice or pasta.  

1. Preheat oven to 450°F. Coat a large rimmed baking sheet with cooking spray.

Place ground chicken, egg, panko, Parmesan, 2 cloves minced garlic, lemon zest, parsley, salt and pepper in a large bowl. With clean, wet hands, gently mix to thoroughly combine.
