Healthy Roasted Spiced Chickpea

Roasted spiced chickpeas are a delightful and healthy snack that are crispy, flavorful, and packed with protein. They’re also incredibly easy to make. Here’s how to whip up a batch of your own: 

Ingredients: 2 cups cooked chickpeas (or 1 15-oz can, drained, rinsed, and patted dry). 1 tablespoon of olive oil. 1/2 teaspoon salt (adjust for taste) 1/2 teaspoon of ground cumin 1/2 teaspoon of smoked paprika.  

1/4 teaspoon chili powder 1/4 teaspoon garlic powder – Optional: 1/4 teaspoon cayenne pepper (if you like them spicy)

1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup. 2. Dry the Chickpeas:Thoroughly dry the chickpeas after rinsing to ensure they get crispy when roasted. You can use a clean kitchen towel or paper towels to pat them dry. Removing as much moisture as possible is key.

– Let the chickpeas cool slightly on the baking sheet; they will continue to crisp up as they cool. – Taste and adjust the seasoning, adding more salt or spices if needed.

Feel free to experiment with different spices according to your preference. Some great additions include curry powder, turmeric, or even a sprinkle of grated Parmesan cheese for a different twist. 

Store leftover roasted chickpeas in an airtight container at room temperature. They are best enjoyed within a few days as they can lose their crispiness over time. 

– Bake in the preheated oven for 20-30 minutes, or until they are golden brown and crispy. Shake the pan or stir the chickpeas halfway through roasting to ensure even cooking.
