Homemade Hot Chocolate

INGREDIENTS

– 8 ounces dark, semi-sweet, or bittersweet chocolate (60% cacao, preferably) – 4 cups whole milk (or a nondairy milk) – 1 tablespoon powdered sugar – 1 teaspoon vanilla extract – 1/8 teaspoon salt

PROCESS

Finely cut the chocolate into little pieces. The bits must be able to dissolve quickly in liquid. Set aside. 

Pour the milk into a small, thick-bottomed saucepan over low heat and bring to a boil. Whisk occasionally to prevent the milk from sticking to the bottom of the pan. 

If desired, add herbs or spices to the milk, bring to a simmer, then remove from heat and leave to soak for 10 minutes. Strain the liquid, then return to the saucepan and bring to a simmer. 

Whisk together the chocolate, vanilla, powdered sugar, and salt until the chocolate is melted. 

Heat for another 4 minutes, stirring regularly, until the chocolate has completely melted. 

Divide across mugs and top with a dash of brandy, if preferred. Top with a spoonful of whipped cream.
