Sticky coconut lime rice 

While coconut lime rice is always in season, it's especially popular in the summer since it goes well with fresh fruits and vegetables like mango, carrot, and edamame.  

This sticky coconut lime rice is simple to pick up with chopsticks or a fork in a poke bowl or veggie bowl, and it goes nicely with this spicy peanut sauce. 


Lime  Coconut milk   Cilantro (optional)   Sesame seeds (optional)  Salt White rice 


In a small saucepan, heat the coconut milk and water until boiling, then add the salt.  

Meanwhile, rinse the rice in a sieve until the water is clear. DO NOT SKIP THIS STEP! Coconut milk is already thicker than water, therefore the added starch on the rice is unnecessary.  

When the liquid boils, add the rice. Reduce heat to a simmer and cover with a lid for 15-20 minutes, or until the liquid is absorbed.  

Remove the coconut rice from the stove once it has absorbed all the liquid. Add the lime zest and juice, stirring to blend. Fluff with a fork, then serve topped with sesame seeds, cilantro, and a lime wedge.
