These anti-inflammatory energy balls are inspired by Cherry Garcia.  

INGREDIENTS

– 1 cup pitted dried date – 1/3 cup packed unsweetened dried tart cherries  – 1/2 cup unsalted unsweetened almond butter – 1/4 cup whole-milk plain strained (Greek-style) yogurt

– 2 tablespoons cocoa powder – 1 teaspoon vanilla extract – 1/2 teaspoon salt – 1 1/3 cups old-fashioned rolled oat – 1 ounce dark chocolate (70%), broken into pieces  – 1/2 teaspoon ground cinnamon

Directions

Place the dates and dried cherries in a small heatproof dish, then cover with boiling water. Allow to soften for about 10 minutes. Drain thoroughly. 

STEP 1

Place the drained dates and cherries in a food processor and pulse until finely chopped, about 5 pulses. Combine almond butter, yoghurt, chocolate, vanilla, and salt. Pulse 5-10 times till integrated. Pulse in the oats until well blended and integrated, about 15 pulses. ( Transfer the mixture to a medium-sized bowl. Cover and chill for ten minutes.  

STEP 2

Roll approximately 1 tablespoon of the date mixture into a 1-inch ball on a sheet of wax or parchment paper. Repeat with the remainder of the date mixture.  

STEP 3

Place the chocolate in a small microwave-safe dish and heat on High for about 1 minute, stirring every 30 seconds.

Drizzle the balls with melted chocolate and sprinkle with cinnamon. Refrigerate uncovered for at least 10 minutes.
