Whipped Blueberry Lemonade

This whipped blueberry lemonade combines coconut milk, lemon-infused simple syrup, and fresh blueberries into a refreshing beverage ideal for a hot summer day.  

Keep the excess simple syrup on hand to make another batch of lemonade, or mix it with lemon-flavored seltzer and vodka for a refreshing drink. Serve this drink with ice cubes to keep it extra chilled.  


Lemon Simple Syrup – ½ cup granulated sugar – ½ cup water – Zest of 1 large lemon

Lemonade – 2 ½ cups ice cube – 1 cup full-fat coconut milk – ½ cup freshly squeezed lemon juice (from 2 lemons) – ¾ cup fresh blueberrie


To prepare lemon simple syrup: In a small saucepan over medium heat, combine the sugar and water and bring to a boil, stirring periodically until the sugar dissolves. Add the lemon zest and remove from the heat. Cover and soak for 1 hour, then pour the syrup through a fine-mesh strainer to remove the zest.  

To prepare lemonade: In a blender, combine the ice, coconut milk, lemon juice, and half cup lemon simple syrup. Blend until the ice is smashed and the mixture slushy. Add the blueberries and pulse to roughly chop. Divide between four glasses and serve immediately.
